A Simple Salad

Mix together, arrange how you want to and eat with flatbread.

Breakfast Bowl

1/2 cup almond milk

1/4 cup chia seeds

1 banana

6 strawberries

1 handful raspberries

1 handful blueberries

1/4 cup mixed nuts

Handful of goji berries

 

Soak chia seeds in almond milk for 30 minutes .

Chop banana and lay on top with strawberries, raspberries and blueberries. Add nuts and goji berries. If not sweet enough pour maple syrup over .

Cookies

1 cup of oats

Two stewed apples mashed

1 banana mashed

Raisins

1 tsp Cinnamon

1 tsp Nutmeg

1 tsp Vanilla essence

 

 

 Mix all together, chill for thirty minutes  and cook on gas 5 for 15 minutes

Pizza

Make dough in bread machine

1 tin tomatoes

1 onion

2 tsp mixed herbs

1 clove Garlic

1/2 tps Salt

 Grind of black Pepper

1 red pepper

4 mushrooms

6 artichoke hearts

Handful of baby spinach

1/2 courgette sliced

1/2 cup pine nuts

Vegan cheese

Cook tomatoes , 1/2 onion chopped finely and herbs in a saucepan until reduced and thick

Spread on dough base.

Fry vegetables until soft and arrange on base.then add artichoke hearts spreading out evenly.

Sprinkle cheese and oregano on top.

 

cook for 30 minutes gas 6

Vegan Slices

2 cups oats

5 dates

3/4 cup coconut oil

1 cup hazelnuts

1/4 cup almond butter

1/4 cup hazelnut butter

1/4 cup cashew butter

1/4 cup gianduje butter [ optional]

1 slab vegan chocolate

1/4 cup puffed rice

Handful chopped hazelnuts.

 

Place oats, dates and 1/2 coconut oil into blender. Blitz until smooth then place in dish and press down. This is the base.

Meanwhile toast the hazelnuts in the oven on a medium heat until brown. When cool place on top of base.

In a saucepan melt the almond,hazelnut and gianduje butter . When melted pour over hazelnuts.

Melt chocolate with rest of coconut oil and mix puffed rice in . Pour over mixture and allow to settle. Place in fridge and eat when solid .

Simple Green Tea

Handful of  mint leaves

Hot, not boiling, water

Put mint in a cup

Mix and wait

Apple Pie

4 apples cored and chopped

1 tps Cinnamon

1 tps Nutmeg

6 Cloves

 1/2 Raisins

1/2 cup coconut sugar

1/2 cup sliced almonds

 

Pastry case

 

 

Line tin with pastry

Put raisins in bottom

Then toss apples in honey ,cinnamon and nutmeg .

Cover with sugar

Sprinkle cloves and almonds over the top

Cover with more pastry.

Paint with almond milk.

 

Bake in hot oven gas 7 for 35 minutes

Serve with custard  and vanilla ice cream.

Energy Balls

Mix five dates

1/2 cup coconut oil

1/4 cup of oats

1 banana

1/2 cup cocoa powder

Tsp vanilla essence

Black sesame seeds

Coconut shards

  

Put oats,dates,coconut oil,vanilla essence ,banana and cocoa powder in blender and blend until smooth

Refrigerate for an hour

Roll into small balls

Roll in coconut shards and black sesame seeds

Bannana Pancakes with Chocolate Sauce

1/2 cup of almond milk

1 ripe mashed banana

1/2 cup of oats

Tbs of coconut oil

2 tbs of coconut sugar

Tablet of vegan dark chocolate

 

Blend the oats until fine then add almond milk and banana and mix until you have a smooth batter.

Melt coconut oil in a frying pan ,melt and add the batter to form a pancake . Swirl until it covers the base of the pan. If too thick add some more almond milk.

Whilst cooking in another pan , break the chocolate into squares and add the sugar and coconut oil and melt .

Flip the pancake and turn onto plate until you have as many as desired. Pour the chocolate sauce over and enjoy.

Blueberry Smoothie

Handful frozen blueberries

Banana

Carrot

Handful of spinach

Tsp macca powder

Optional handful oats

Almond milk

 

Blend a handful of frozen blueberries with a banana, a carrot, some spinach,tps of macca powder and a cup of almond milk until smooth. Add oats if you wish.

Hearty Vegetable Soup

Vegetable soup

1 onion

1carrot

1parsnip

1beetroot

1potato

1sweet potato

Tins tomatoes

1/2 pint water

3tbs nutritional yeast

1clove garlic

1 handful chopped parsley

1tbs oregano

1 tps paprika

Handful of grated vegan cheese.

 

Fry onions in tbs olive oil , add herbs ,garlic, nutritional yeast and vegetables chopped finely. Add water and tomatoes. Simmer for 30 minutes.

When serving sprinkle tsp paprika , season and add grated vegan cheese.

Serve with hot crusty bread.

Mushroom Risotto

3tbs olive oil

1 onion

1 cup risotto rice

1 cup of mushrooms

2 cloves garlic

3tbs nutritional yeast

1tbs oregano

I carrot

1pint broiling water

Cup of grated vegan cheese

 

Fry onion chopped until brown in olive oil, add rice and garlic . Fry until rice has absorbed olive oil then add mushrooms and carrot. Add yeast and then slowly add water and simmer adding it bit by bit.

Add oregano and serve sprinkled with grated vegan cheddar .

Apple Crumble

4 apples

1/2 cup sultanas

Tsp cinnamon

Tsp nutmeg

Tsp clove

Tbs of coconut sugar

 

1 cup oats

Handful chopped nuts

1 cup whole meal gluten free flour

1 tsp mixed spice

1/2 cup coconut sugar

1/2 cup toasted breadcrumbs

1/2 cup melted coconut oil

 

Place chopped and skinned apples in a dish. Sprinkle with spices and sugar. Then sultanas .

Mix all the crumble mixture and add coconut oil . Finish with flaked almonds and bake for 40 minutes gas 6 until golden brown

Serve with hot custard or ice cream.

Spiced Tea

1 cinnamon stick

1 tsp ginger chopped

1 tsp nutmeg

1 tsp turmeric

1 bay leaf

1 lemon

1orange

500 mls water

 

Place spices in saucepan with water, zest the lemon and orange and add juice of both. Boil and then simmer for 20 minutes .

Energy Smoothie

1 cup oats

1 banana

1/2 cup frozen berries of your choice

1 apple

1 stick celery

1 handful baby spinach

 TPS macca powder

1 apple

1cup coconut water

1/2 cup almond milk

 

Blend in mixer until smooth

Drink with handful mixed nuts

Chocolate Cake

2 cups plain flour

3/4 cup cocoa powder

2 tsp bicarbonate of soda

1 tsp baking powder

 Pinch of salt

1 and 3/4 cup coconut milk

2 tps vinegar

1 and 3/4 coconut sugar

1 and 1/4 coconut oil

1 tps vanilla extract

 

 For the icing

2/3 cup vegan dark chocolate

2 tbs coconut oil

2 tbs date syrup

 

Preheat oven to gas 5 or 160 Celsius and grease a 9 inch cake tin.

Sift the flour ,cocoa, bicarbonate ,baking powder and salt into a bowl.

Combine the vinegar, sugar, melted oil and vanilla extract in another bowl . Add the flour mixture slowly and whisk until smooth. Pour mixture into greased tin and bake for 45 mins or until a cake tester comes out clean. Place on wire rack and allow to cool.

In a saucepan melt chocolate , oil, vanilla essence and date syrup until liquid. Allow to cool and spread onto cake . Top with anything you like.

Tortilla

2 onions

1 pepper

2 mushrooms

Tsp fajita seasoning

Salt and pepper

1 clove garlic

Tsp oregano

1 chilli

Tin black beans

1 carrot

1 sweet potato

Packet gluten free tortilla wraps

Guacamole

Salsa

Vegan cheddar

Vegan mayonnaise

Cooked rice 1 cup

 

Cook sweet potato and mash

Add tsp garlic minced

Cook black beans with diced carrot ,diced onion,1/2 chilli

Season

 

Heat tortilla

Fry onion until brown

Add chopped carrot,mushroom, pepper, chilli and garlic. Combine with fajita spices.

Assemble tortillas. One with sweet potato, vegetables ,guacamole, rice, and grated cheese.

One with black beans r,rice ,salsa, mayonnaise ,vegetables and grated cheese.

Serve with salad of choice.

Guacamole

Two ripe avocados

Clove garlic

Handful of coriander

3 cherry tomatoes

1/2 red onion

tps lime

Salt

Pepper

Tbs olive oil

 

 

Mash the avocados to make a rough paste. Squeeze lime juice over. Add onion finely chopped, tomatoes finely chopped, coriander finely chopped, garlic finely chopped and season with salt and pepper. Add olive oil and mix until blended. If you like you can use blender but it's a better consistency with hand mashing.

Serve with tortilla chips or pitta bread .
